Breif explination of GPU OC'ing?

Im using MSI afterburner, and am running a GTX260m on my ASUS G72gx and wanna start playing more graphicly instensive games. I noticed when im using the stress test im at below 80C on a load.

Can someone explain to me what core clocking is and what the memory clocking is? which should i boost? whats a safe temp? how do i know its stable, etc?

More about breif explination
  1. I have read in more than few different sources that graphics cards can take a lot of heat. (>100C)

However, I try to stay below 75C for longevity of the card. <<subjective.

I have not seen noticeable improvements with overclocked vram (memory) and it can cause instability, so I just overclock the "core clock".
