256 bit is wider so you cna send twice as much data through it

example:

you are going from A to B, at rush hour
now the road there is only 2 lanes long but there over 500 people on it, there ofre a 20 minute trip takes you 1 hour

the next day they widen that same road so now you have 500 people on a 4 lane road, so now a 20 minute trip takes you 15 minutes

so you see a wider memory interface means more data sent and faster

and gddr5 is twice as fast at the same buswidth and clocks than ddr3
so
5@128bit@900MHz is as fast as 3@256bit@900MHz
