2 xeons vs 1 i7

Hey everyone,

I am building a workstation for high-end 3d animation. I am debating over 2 configurations and I need some advice.
For around the same price I can get two xeon E5507 @ 2.26GHz or I can get one core i7-960 @ 3.2GHz.

Which is going to give me more power, two slower xeons (8 cores) or
one faster i7 (4 cores)???

PS The rest of my system will have:

16Gb DDR3 ram
SSD for boot disc
1 TB data disc
Quadro FX 1800 or a GTX 470 (can't decide yet)

I also want to make clear that I don't play games. This is stickly a workstation for 3d animation.
