Best Graphic Card for Video Editing

I edit HD video and my current machine just isnt cutting it so I'm going to build a new machine from scratch but need help choosing a video card.

Heres what my system is going to look like:

Intel Core i7 2.66 (but I'm going to over clock it to get close to 4)
ASUS P6T Intel X58 Chipset DDR3 Mother board
6MB (2MB x3) Kingston DDR Ram
750w power supply

The mother board will support SLI and Crossfire.

I would like to also have dual monitor support in the future though I'm not sure if I can get this with a second card in a SLI configuration or need a card that supports dual monitors. I do want a card with at least 1GB memory.

Any suggestions?

Any single card sold today has dual monitor support. The ATI 5000 series has 3 monitor support.

As for HD video editing... Im not sure if the video card matters more than the CPU. Some one else will hopefully help you with that. Maybe software features like CUDA and ATI Stream will help speed things up.
