I have the 2GB version of your card and yes I was able to overclock it a tiny bit. If i can remember off the top of my head I kept the default voltage and default mem clock, but got the GPU clock to go up to 940 Mhz. I'm still messing around with it to see how far I can push it though :) This was on 1920x1080 on BF3 medium graphics settings getting roughly 90 FPS. Testing it on high settings here shortly. Hope this helps :)

My System Specs:
Intel i5 3570K-Ivy Bridge 3.4 Ghz (Turbo to 3.9 Ghz)
EVGA GTX 560 TI 2gb
2x4GB Raw GSKILL RAM
Asus mobo with z77 LGA 1155

Well thanks C: but my two new Radeon 7950s show up in the mail today, so I'm going to be putting the GTX 560 Ti in storage.

Going over to the dark side I see :p Say.. you're putting it in storage, its the 1 GB edition and SLI ready. Were you trying to sell it by any chance?

Thanks for the interest but I'm in no need of money and I'd rather just keep it for a rainy day, I'm thinking of a new build with the new NZXT Phantom 820 with a 2011 Mobo and Hex-Monitors.
