I've never overclocked anything before but I have an i5-3570k with a Z77m mobo. I installed the Intel Extreme Tuning Utility to see what I could do with it. I noticed that I have some options missing. When I click on "Manual Tuning" I don't see any of the sub-categories (Processor, Voltage, Memory and Bus). Why don't I have these?

No it doesnt, but it would be detrimental to overclock with any stock cooler. You should do things in order:

1) Read up on overclocking. It is not a n00b thing to get started in.
2)get the relevant hardware, e.g.:proper cooler.
3)Perform the actual OC in the BIOS. Never use any software!!!
