Hello, I purchased some 4gig USB flash drives from china for my charity, I've since discovered that they can only hold 1gig of data before they begin to corrupt any data on there.

Is there a way i can format them to 1gb instead?

Well you could set the partition size to be 1gig. If you have a flash drive that is corrupting data I would throw it out and buy a new one though. It's not worth dealing with the hassle of possibly losing data for such an inexpensive device.
