I am upgrading a laptop that runs a device using a DB9 pin serial cable. Is there any reason that an adapter wouldn't work

Shouldn't be a problem. Just make sure it is compatible with say, USB 3.0 if you go with a laptop that has it.

I've been using something like this for years, I can't find a link to the exact one I use though.

Try this site: http://www.performance-pcs.com/catalog/index.php?main_p...

They have a lot of hard-to-find cables (USB) like this one: http://www.performance-pcs.com/catalog/index.php?main_p... - This is what I used (2 cables) to connect my Card Reader to the motherboard because I ran out of USB pin headers on the board (used them for the Case HAF 932 Front Panel connectors)

Make sure you are buying a quality usb to serial adapter cable, trust me ..those cheap ones from ebay just aren't reliable. I bought several of them just to find out they didn't work. What I found out was that the drivers and chip for some reason just wasn't compatible with the serial devices I connected to it.
Read this USB serial adapter Wiki and you will learn everything you need to know before you buy a usb serial adapter.
