what power supplies would you use considering an i7 motherboard and a graphics card that recommends a min of 500 watts. I don't know what will fit the skeleton

Which graphic card specifically? Are you going to overclock? Any normal ATX PSU should fit. Antec recommends that you buy a PSU with a small 80mm fan pushing air from the back, not ones which have large 120mm/140mm fans on the top/bottom. If you do buy a PSU with the fan on the bottom, you will need to install it so the fan is facing down.
