Memory for Asus ROG Maximus III Formula P55

ive just bought a Asus ROG Maximus III Formula P55 and a i7 860 and iam going to need some memory for it
i dont want to spend too much but i would like 8gb if i buy 2 Corsair Memory XMS3 4gb CMX4GX3M1A1600C9 what are the chances that they will work together dual channel
or should i buy 2x dual channel kits

Buy a matched set; the sets are BIN sorted and matched. The Corsair CMP8GX3M2A1600C9 is well worth the ~$40 difference.

what about voltage should i be looking for 1.5v memory i assume that 1333MHz 1.5 volt memory will not help me overclock but will 4x 1.65v memory put stress on the cpu ??

Yes, a single Dual Channel set is better in the sense of 'benchmark' but only better by a fraction vs 'Quad' loaded Dual Channel. Regarding 1.5 vs 1.65 and better OC - No, set the DRAM Voltage to 1.65v. If there's a problem it's that people don't manually set the DRAM Voltage before they OC and a BCLK increase often causes the BIOS to over-power the DRAM voltage; manually setting eliminates that issue regardless of the rated DRAM voltage.

It's NEW and therefore not on their list yet.
