AHCI mode is a SATA port setting.
SATA ports can have 3 settings: IDE mode, AHCI mode, and RAID mode.
So AMD chipset based systems, as well as Intel chipset based system can have AHCI mode on their SATA ports.

So do you know if an Asus crosshair 3 supports this? Is this available only on certain motherboards?

Yes, the SATA ports on the Asus Crosshair III support all 3 modes.
SATA ports on modern motherboards normally support all 3 modes.
