I don't want to skimp on the PSU at all. Will 620W be enough or should I move on up to a 650W/700W PSU?

Specs so far:
Intel i5-2500
Asrock P67 Pro3 Motherboard
Either an EVGA or an MSI (when it comes) GTX 560 Factory Superclocked at 900Mhz+
G.SKILL Ripjaws X Series 8gb (2x4) DDR3 1333 (PC3 10666)
1 Samsung Spinpoint F3 500GB HDD (OS/games/apps)
1 Samsung Spinpoint F3 1TB HDD (storage)
ASUS DRW-24B1ST/BLK/B/AS Black SATA 24X DVD Burner
TP-LINK TL-WN781ND PCI Express Wireless Adapter

I don't plan on overclocking at all. I also don't plan on using SLi in the future.

My choices so far:
SeaSonic S12II 620 Bronze 620W ATX12V V2.3 / EPS 12V V2.91 80 PLUS BRONZE Certified Active PFC Power Supply

or

CORSAIR Enthusiast Series CMPSU-650TX 650W ATX12V / EPS12V SLI Ready CrossFire Ready 80 PLUS Certified Active PFC Compatible with Core i7 Power Supply

Leaning towards the SeaSonic because it is $20 cheaper but also 30W less. Opinions?

you will be fine with either of them. the seasonic is like 2% better quality but they are both extremely good power supplies. the seasonic is a clear winner if it costs $20 less! and 620w is plenty for that build
