I5k or i7-950 please help

[ Hi, a quick question about whether or not I would notice a huge difference gaming with these 2 combos. The video cards would be the same GTX 460 1mb and for the sake of arguement 8 MB of 1333 mhz memory. My question is this: Would I notice a huge difference gaming (WoW, Black Ops, SCII) between the new Sandy Bridge i5k processor (the unlocked one) and the compatible ASUS Sabertooth motherboard (I just like it) and an i7-950 and its associated Sabertooth MB. The dual channel vs triple channel memory and the pcie in sli (x8/x8 vs. x16/x16) are my biggest concerns, I guess I dont understand enough about them. Id go with the sandybridge because its better and sets you up a motherboard for the newer processors in 2012 (i think)
Both are good and wont struggle with any games, i have an i5 760 with an 8800gts and im not struggling to play any games.

Not sure which processor overclocks better out of the two so it will be best to wait for a couple of replies before making a decision.
