Atm I have:
Amd athlon x2 6000+
4gb 800mhz
500gb hdd
5870

Im going to build:
i7 920
6gb 1600mhz
5870 crossfire
850w

Now its highly playable with some lagg, at least 20fps, this with a dual core processor (but when i destroy buildings my cpu are working like hell and laggs everything). At crysis benchmark i got avg. 30fps.

So i should be able to play crysis (2?) with everything maxed out @ 1920x1080 with my new built. Is the cpu bottleneck?
But if its playable with dual core it should work very well with quad, and future games will take advantage off quad core better?
I got a regular 5870, not eyefinity edition. It still supports eyefinity, just connect 3screens and play? Does it require more cpu/gpu when using 3screens?

^ If you want to take full advantage of the HD 5870, then upgrading the CPU is the option...
What is your screen's resolution ?
And you dont need an i7 920...Even the i5 750 would also compliment that graphics card well...And I would suggest you first stick with 1 HD 5870 and add 1 more later...am sure 1 card will play the latest games at High-Very-high even at 1080p resolution...

Yes 3 screens Eyefinity is supported with the regular 5870 as well - the Eyefinity edition is for 6 screens....
But the only catch here is that you should have 1 screen which takes Display port as input or have to use an active Display port adaptor for running 3 screens using the HD 5870...

I play mostly 1680x1200, and 1980x1080 dunno why i only can run 1680x1200 at crysis when i am able to run crysis benchmark at 1980x1080.
Im going to build this in a matx case and i only found 1 motherboard which supports 16/16x crossfire. It only supports 1366 intel i7.
I really want a small computer, and dont worry about the heat, and it will fit.

Does eyefinity at 3screens take loads of cpu/gpu power? I mean its like 1980x1080 x3?

^ Well I dont think there would be any performance issues running cards at x8x8 vs x16x16...
And also you have to select a proper case as the HD 5870s are long and might not fit all the cases...
As for the CPU/ GPU power,
CPU - The Intel i5 750 would suffice for that
GPU - Depends on the game - A single card might be able to push 3 screens for games like Dirt2 without any issues, but for games like Crysis, you would need more graphics power...

Everything will fit.

Googled some to find out if there was differense between 8x or 16x crossfire, people said it was like 10% and more if i got like fast card. So i just go with 16x and i7.

Dirt 2, everything highest, 3x 1920x1080, dx11, doesnt that require like gpu power - which i have with 2card then but anyway :D

So 2x5870, 1920x1080, entusiast, will run crysis nice at 3screens?
Does crysis2 require same amount of power as crysis (1)? Nobody knows?

^ Well its you call though...but anyways going x16x16 will offer better performance only(even though not very significant)

And as for Crysis 2, it will not need the same amount of power as Crysis 1 because Crysis 2 takes place in the city(big stationary building)and thus doesnt require so much rendering(fluttering leaves, trees, birds,...)
And also the Crysis Warhead was a better optimized than Crysis 1 and looks as good...

Off topic is it true that this crysis youre in city cuz console are not good enought to show jungle?
Which games can u play with eyefinity?

^ Maybe true...companies see for expanding their revenue stream...

And as for the games, some I know are HAWX, NFS Shift, Left 4 Dead, GRID, FarCry2 ...
but there are money though...
