New system build questions

Starting the design of a P6x58D-E system and would appreciate comments and help.
Looking at Win7 64bit, 12GB memory, dual 0.5 TB HDD (7200 rpm or better) - WD Caviar Black 640GB - no Raid, Intel X25 M 80GB SSD, Video card -MSI Radeon HD 5770 1GB, Corsair 650 power supply. Main purpose initially will be heavy computing (work for MAJOR computer company - not MS) also gaming but not serious.
1. Seeing a fair number of comments as to which memory vendor to use. I am considering 12GB. But looks like it becomes critical to use the correct vendor. Suggestions as to a good vendor. I have seen a number of posts that install xGB memory but only can see something less than that - is this a typical issue with this board.

2. Seeing a lot of i7 920/930 CPUs - any suggestions here?

I don't quite understand the meaning of "I have seen a number of posts that install xGB memory but only can see something less than that "
4GB RAM using 32 bit OS perhaps?
