Cloning hard disk drive??

I have a 64gb SSD installed as my boot drive, and was wondering if it is possible to just mirror the SSD onto a larger SSD and just have that as a failsafe drive? Use the larger SSD as a nightly backup clone of the 64GB one so if I ever want to use the larger SSD as my OS drive I could just unplug the smaller one and switch to the larger one? I know you can mirror drives using RAID, but is it just as simple as unplugging the 64GB one and starting to use the larger one?

This kit worked like magic for me. It cloned my old HDD to a SSD perfectly. It should solve your problem.
