Both rigs will cost me about the same price, just wondering what one is more favourable, for gaming? last longer? More up to date?

For gaming number 1.

The first build has a great gaming CPU and a fantastic graphics card.

Build 2 has improved your CPU but seriously downgraded the Graphics card.

In gaming terms:
the i7 over an i5 750 gives near insignificant fps gains.
The 5870 is a FAR more powerful card than the 5830 and will give much better fps

Agree. The second build will not be able to play games well at 1920x1080 and the first build wouldn't be bogged down in any game. I would even consider saving some money and dropping the Eyefinity 6 5870 to the regular 5870, unless you already have a bunch of monitors you're going to use with it.
