64 bit CPU and Windows 7

Hi all,

I will be investing in a quad core PHenom II 745 to run scientific calculations and I need to extract all maximum efficiency. Is the instruction set 64 bit of the CPU?

I assume that if I install Windows 7 32 than I will not be able to take advantage of the 64 bit instruction set. If I install Windows 64 bit apart from the larger memory addressing space will the software I have take advantage of the 64 bit instruction set. (The software already supports 64 bit CPU's).

I.e. will windows 7 64 bit run my software faster than windows 32 bit assuming that same PC configuration.
