WHAT CPU SHOUDL I GET FOR A GAMING PC?

Well, actually, the 965 is a little better for gaming, but if it were me, i would get the 1055T and overclock it. The 1055T might serve you better in the future but the 965 will certainly serve you better now, especially since you can hit 4.0 on that 965 without blinking an eye.

It is fine if someone else overclocks the CPU, just be sure that they are available in the event that something happens.

If you are going to have someone overclock, then go with the 1055T, if no overclocking, stick with the 965.

That all depends on what you want to spend, Intel will be a little better for gaming, the i5 760 would probably be your best choice as it is still on top of the chart, anything more for gaming would be overkill for now...

If you plan to go crossfire 5970 though, I would have a look at this, then get 3 5870s in crossfire instead.

The crossfire 5970s don't scale as well at 3 5870s. Occasionally the 5970s will come in the lead but usually the 3x5870s win. The differences are all minor though.
Myself, I would get one 5870, get a second if you want more performance... and a third if you still find you are unhappy.
