When the BIOS is shadowed it means it has been copied to RAM so that DOS programs and some older Windows drivers run a little faster. I always leave that option disabled now because once you boot up into Windows the BIOS is rarely accessed, but if you are booting up directly into DOS or Windows 9x you might want to enable it.
