How does Nvidia's contracting and manufacture process work?

i keep on hearing about TSMC, and i see all these brands (EVGA, Asus, Gigabyet, etc.)

so, how exactly does the process work? Do the brands make the cards themselves or do they simply receive fresh PCBs and customize it?

Well, TSMC makes the dies (chips), someone else makes the ram, and for the later (non-reference) boards the manufacturers make/assemble/design the rest or contract out to another manufacturer.
