Hello,
have a video that I'd like to spread across 3 LCD monitors with native resolutions of 1920 x 1080. what kind of computer and graphics card should I be looking for. I also have a Matrox TripleHead2Go.

any ATI 5xxx series card with a display port will work

a 5450 or 5570 will do the job for basic video/business use, for gaming you would need more demanding cards in the series

application is for a historical display. What happens to the linearity of the image? The sizing-linearity of image is correct on a single 1920x1080 HD monitor, what happens to the image when it's spread across 3 HD monitors? Images get "stretched"? How would a image be formatted/edited with a single HD monitor?

You cant do this, a TH2GD has a max res of 5040*1050 @ 59hertz, you need to move to eyefinity/nVidia Surround.
