SLI OR CROSSFIRE: Dont know what this is or if it applies to what i want

ADDITIONAL COMMENTS: must be near silent and run cool as it will be in a media shelf

I know how to build computers.. but the last time i actually did so was in probably 2002 or so. i'm guessing the princple of snapping them together is pretty much the same. parts and slots etc have completely changed though.. I really know nothing about what I need to get the job done beyond basic categories such as MB, CPU, GPU, RAM, case, etc. I would really appreciate some help as I'm lost in trying to figure out what parts will fit.... power needs... silent fans.. heatsinks...
