I'd be looking at something more like this:

RAM: G.Skill Eco 2x2 GB 1600 mhz CAS Latency 7 $104
GPU/OS: HD 5870 and Windows 7 Home 64-bit OEM $480 (with free game)
HDD/PSU: Samsung Spinpoint F3 1 TB and Corsair 650W $125 after rebate
Case: Antec 902 $90 after rebate
Optical: Cheap SATA DVD burner $20
HSF: Coolermaster Hyper 212 Plus $30

Total: $1,191

This build is significantly more powerful and only costs slightly more.

Unfortunately neither of those combos are still available, and you didn't list an OS, which would bump it up to $1200 even if they were. =(

Ok, here are my thoughts. I was building this to leave open the possibility of crossfiring 2 5850's at some point down the road once it started getting dated. With a 650W PS, and the 5870, that option is probably off the table, and even if it wasn't, would be more expensive.

Do you think losing the option for Crossfire, and downgrading the case and PS, and spending $30 more, is worth the initial increase in GPU? Because I'm torn.

Duals 5870 could get by on a 650W unit. According to ATI, you only need a600W PSU, and that's a conservative number. You'd just need to get some adapters to get the right number of PCIe connectors.

Even with overclocking? I don't know, I'm new to overclocking, but I plan to do it on this build.

You should be fine. High quality units like the Corsair can actually provide more power than what they state they can.

The XFX because it has a better warranty.

Though the XFX will cost $2 bucks to ship, and comes with Aliens vs. Predator, while the HIS has free shipping and comes with Modern Warfare 2. So really, whichever you want.
