The Ram I plan to use is Ripjaws 1600 mhz ram.
is it possible to run it at 1600 mhz with some bios tweaking despite 1600mhz not being listed? Or maybe even possible to overclock the ram to 1800mhz?

Yes, there are some 1600mhz memory modules listed in the memory support list of your board. You may be able to OC to 1800. 2000 is listed as the max for your board. Depends on the memory and the board and cpu compatibility.
