Yes, crossfired HD5850s are certainly much better than a single HD5870, especially if you overclock the cards.

2 x HD5850's will easily beat a single HD5870.

Um, where is everyone getting 5850? OP said 5770 Xfire. 5770 Xfire is close to a 5870, but more heat. If you are buying new, definately get a 5870. You can get a second down the line if needed. With two 5770, you are pretty much stuck with no way to upgrade.

I would get an HD5850 and overclock it over crossfired HD5770s

Plus the fact that crossfired 5770's are are PITA with certain games.

I would go with 1 5970,because it performs like 2 5850s but is quieter,has less power consumption and occupies 1 PCI-E slot
