I heard that when setting up a machine with core i7 processor, memory should be in multiples of 3 (3GB, 6GB..) for optimal performance. Is it true?

Yeah, the i7 is triple channel memory based, as is its motherboards. Therefore triple channel memory will yield best speed and compatibility. That means buy this:

Excuse me if this is wrong, but is the above really correct? Is there not a difference between the i7 models and some of them are for X58 motherboards and some are for P55?

Absolutely right.
Triple channel RAM only applies to 17 9xx processors on the x58 platform. i7 8xx processors run dual channel RAM on the P55, H55 etc. platform.

Thanks, that was what I thought. So depending on if the OP has an Intel i7 8xx or 9xx then multiples of 3 might not be optimal.
