Is it necessary or recommended to connect the case fans to the motherboard, or just the cpu fan? Can they be connected to both the PSU and mobo, or just one?

In case it's just one, which one would be better?

The motherboard; it may have smartfan adjustments in the bios to keep them quiet.

You only need one connection. I remember reading there's a difference between a three pin motherboard connector and the four pin direct PSU connection, something to do with power fluctuation but I think it's such an insignificant element I wouldn't worry about it (I didn't). If you have a four pin motherboard connection I'd go for that because that gives you the pulse width modulation and you can use software to automatically control the case fans as you would the CPU and graphics card.
