I'm curious, what exactly are projectors? I would think that since they
are a real performance hit, they must be something pretty cool?

Basically, projectors allow you to project textures on items in the map, the
same way a projector works in a movie theatre. Here is a link to a tutorial
list that will give you a good overview.
