More important? latency or speed

Looking at these two for VIDEO editing / rendering as well as photo editing (no games)

cpu Intel Core i5-2500K Sandy Bridge



I assume Patriot is too good a deal to pass up, but I was attracted to the CAS Latency of 7 on G.Skills to 9 on Patriot vs. the 10600 to 12800 speed difference. Bottom line, I appeal to you tuned in folks: which matters more?

This and similar articles say that latency is not as important as speed.
Speed above 1600mhz is not worth it.
