New SSD and HDD 2010 MacBook Pro

Tomorrow I'll recieve a brand new Crucial m4 128gb and a Segate momentus XT 750gb 7500 rpm. I currently have a 500gb 5400 rpm in the MacBook now. I was wondering if I did install both new hard drives turn on the computer formatted them both (extended journal I believe) then use an external to put Lion on the SSD. Would I be able to move just my applications from my current HD (I'm going to put in an enclosure) to the SSD and just my media files on the Seagate. How would I go about doing that. Thanks for any information.

Thanks for helping everyone!!! I used this linkage http://mattgemmell.com/2011/06/21/using-os-x-with-an-ssd-plus-hdd-setup/ to get it all setup. I had to go to every application individually though and tell it where to store its data. Since then I've had no problems.
Initially I put the home folder on the HDD and the applications didn't like it so I wiped the SSD re-installed OS X and followed the site above.
