I have 2 Kingston HyperX 120g SSDs on a Raid0 on a z68 board (data on separate HDDs)...Reason is I only had 120g and needed more space for programs and games so I RAIDed the two for 240g...It's been 3 months now and I have not experience any problems or performance issues...Being I don't have TRIM on a z68 am I going to eventually experience issues???

Modern SSDs do not rely solely on TRIM to maintain drive performance. They also use idle Garbage Collection.

Just Log off (not Shut down) overnight once every other week or so to allow GC to do its thing.

Not really; unless you're installing and then uninstalling programs frequently.
