The Core i7-875K is unlocked so it is generally easier to overclock. It also has hyper-threading so it can basically imitate an 8 core CPU while only having 4 actual cores. But any performance boost will be dependent on how much "headroom" each particular core has to put it in a very simplistic way.

Games do not use more than 3 cores at the moment; therefore hyper-threading yields no performance increase over a CPU w/o hyper-threading.

Is this for gaming? If so you're spending way too much on the CPU and not enough on the GPU.

Whatever you do, that ram is terrible. http://www.newegg.com/Product/Product.aspx?Item=N82E16820231321 is much better and less expensive to boot.

Get G.SKILL RAM with a CAS Latency of 7, no higher

If I may suggest, the Ripjaws

Also instead of getting that CPU, get a better GPU
