I5 2500k Build - Ram/PSU selection?

I am building an i5 2500k system... mobo and CPU below:
ASUS P8P67 ATX P67 3PCI-E16 Motherboard + Intel Core i5 2500K Sandy Bridge CPU
I am struggling with RAM and a PSU selection with this setup (i dont have the tech knowledge). I am set on an 850w PSU for future expansion (dual 6950s likely).

If you are planning High overclock then you might want to go higher in speed.

planning on a moderate overclock, nothing to break the sound barrier... but likely enough to pull on the system. What would you recommend for a high overclock?
