Hello,I am about to build my first gaming rig. Using intel core i7 2600k. Looking for the best mobo to use with it. So far the Asus P8Z68 & P8Z67 are looking the best. Any advice?

I am assuming you mean P67 not Z67.

That said the Z68 is a newer and more powerful chipset with better features. If you can afford the extras, I would definitely go with the Z68.

That said, I would highly suggest waiting 6 or so weeks and getting the Sandy Bridge - E Z79 chipset (LGA 2011) that is coming out late oct or early november.

That is a press release from back in March...

USB 3.0 should be present at launch due to the market saturation of it currently on older systems than it.

PCIe 3.0 will not be supported until Ivy Bridge architecture, and shouldn't be a stopping point since GPU's can't currently saturate a PCIe 2.0 pipeline. The only thing you would need PCIe 3.0 for is data transfer, and you have plenty of SATA 3 connections on there anyway.
