Should I i7-2600k or i5-2500K; does hyper-threading make any differen

I have been suggested that buying i5-2500K instead of i7-2600k will save me lots of money.

Does hyper threading really make a difference?

I do graphic design and games.

That will depend on whether ya consider $100 lots of money. Look ant the benchmarks and estimate how much time ya will save .... then decide of that time is worth $100

Yes I do lots of tablet-painting, and batch process loads of images.

you mean multitasking is like playing playing mass effect 2 while also playing COD blackops in virtual machine while watching CNN new stream and at the same time ipod-transcoding whole anime series while burning pirate dvds?
