Need HELP with MOLEX fan control for OC

This is my FIRST custom build in over ten years, and I wanted to try and design it for MAJOR overclocking ability cuz I work ALOT on processing sudio and video, uncompressed - which take A LONG time I want to speed up the processing time as much as possible - so here's my system;

BFG 1000watt power supply
Thermaltake Armor+ LCS VH600LBWS Liquid Cooled Case w/ 230mm side fan
ASUS M4A89TD PRO/USB3 AM3 AMD 890FX SATA 6Gb/s USB 3.0 ATX AMD Motherboard

1 rear exhaust fan in the bottom PCi slot

ALL of my fans, except for the 230mm fan have MOLEX connectors absolutly NO 3-pin or 4-pin connectors that would typically connect to the MOBo or a fan controller.

My QUESTION: Is there a way to, 1. control the speed of these fans, 2. Have temperature sensors to help in the controlling of this fan

Forv I tend to do ALOT of Overclocking when i am processing audio or video - However there are times when i need to do so recording, using microphones in the same room as my computer, so I would like to be able to turn the fans down as far as possible, or possibly even off since I have the liquid cooling system and obviously would NOT be overclocking at the time of recording

Couple of comments:

1) BFG power supply?
2) You won't be able to pull more than 900 watts because of UPS, so why have a 1000 watt P.S.?
3) Why so many CD/DVD drives? And of mixed make and model....no Blu-Ray?
4) Which Armor case?
5) Will the video be processed solely by the CPU?
