Mid-range Gaming Rig Build needs input

I like to receive some input on my gaming rig that i try to put together.
New to OC'ing but tend to google alot about this with settings and stuff and applying them to my rig.

So i'm gonna be using this rig mainly for gaming and finetuning(OC'in) the parts.

Currently i already have a:

COOLER MASTER Silent Pro M700 RS-700-AMBA-D3 700W ATX12V V2.3 SLI Certified CrossFire Ready 80 PLUS Certified Modular Active PFC Power Supply

What i had picked together was:

  • SAPPHIRE Radeon HD 6870 1GB 256-bit GDDR5 PCI Express 2.1 x16 HDCP Ready CrossFireX Support Video Card with Eyefinity

  • ASUS M4A89TD PRO/USB3 AM3 AMD 890FX SATA 6Gb/s USB 3.0 ATX AMD Motherboard

  • AMD Phenom II X6 1055T Thuban 2.8GHz 6 x 512KB L2 Cache 6MB L3 Cache Socket AM3 125W Six-Core Desktop Processor HDT55TFBGRBOX

  • G.SKILL Ripjaws Series 4GB (2 x 2GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model F3-12800CL7D-4GBRM

    Can i run it with stocked cooler or replace it?
    What i had in mind was:

    Scythe Mugen 2 Rev. B

    What i want from this thread is if this set is compatible or change any components and if it is good enough to run/game for about 2 years?
    Should i also take a second 6870 Cross or buy a better single card in the near future (6months to a year)?
    I always play 1920x1080 resolution on a 24inch screen.
