Some confusion with Z68 motherboards

I'll preface this post with the fact that I am still very new to building systems and therefor do have a slight lack in knowledge on some things.

I've spent the last hour or so reading various articles on the Z68 motherboards and it seems the more I read the more I become confused about the major differences between the Asus, Gigabyte, AsRock, etc.

I'm looking to build a top-knotch gaming rig (starting with one GTX-580 and will eventually SLI a second). Can someone explain to me the best Mobo in this series for gaming, and what exactly makes it the best? This would be extremely helpful, thanks.
