Upgrading 2x 8800 GTS, Need Help

This is my system:

Asus M3N-HT Deluxe
AMD 2.6 ghz Phenom
Corsair XMS 4 GB DDR2 800 mhz
EVGA 8800 GTS 512mb x 2
Thermaltake 1200w

I recently changed my 27" monitor for 3 x 25" monitors and would like to take advantage of the new screen spanning technologies (Nvidia Surround/Eyefinity), but I haven't kept up with the models and their abilities in recent years. All 3 monitors are the same and run at 1920x1080.

Can anyone suggest a decent video card setup that would give me a good improvement in speed and give me the better spanning? I would like to only spend between $200-$500, but want to keep the purchase reasonable. My RAM is next on the table for an upgrade.

If you don't want to mess around with DP adapters then a pair of GTX460's would be within budget and be able to be dropped straight in, you might need a faster CPU but that would then be the case with any of the newer cards.

Would it be best to use the 768mb or the 1GB version?

The 1GB versions are the only ones that are really worth looking at, I don't know why they bothered doing two versions but there you go.
