Running in RAID0 would be very dangerous indeed and depends on your hardware and whether it supports hot spares
Personally I would use RAID5 if performance is not an issue or RAID10 if you need high speed. If you have multiple RAID controllers you could also split your disks into two separate groups so a controller failure does not bring all your storage down.
Unless you have MASSIVE IOPS requirements for a database server or something, I do not really see how 8x128GB SSD RAID0 would benefit you. If this is for a DB server, consider RAID 10 and not RAID 0. If this is for a gaming machine or something similar, just get yourself 1 nice large SSD.
