2 quad cores vs. 1 - 6 core

Hey guys, I am looking at building a rendering node to use with 3ds max, and I was being pointed towards the Intel i7-980x (http://www.intel.com/products/processor/corei7ee/index.htm).

So my question is, for a price tag of $1000, wouldn't it make more sense to purchase 2 intel i7-2600 (http://ark.intel.com/Product.aspx?id=52213&processor=i7-2600&spec-codes=SR00B) instead? Since they're only $300 each I figured the money could be spent on a better GPU as well.

Well I figured for a total of $600 bucks for the 2 cpu's, the extra $400 could probably cover the cost, I was more curious about what the performance difference would be...
 
You would have to build a dual Xeon system which would cost way more then just the 980x and if you want Xeon's built on the new Sandy Bridge arch you will have to wait at least a year for them.
