Not sure if it would be wise to install it with out any airflow underneath, right?

Also Im curious if anyone knows the real diffrnece bettween the seasonic 750 and 760? I find it hard to belive its just 10watts

The "x60W" versions are simply a new line which started with the 560W model. They will be replacing the older "x50W" models.

I have the 560W version, and it kicks butt. The fan doesn't run all the time like a traditional power supply -- it's only when your system pulls a certain amount of power from it that the fan starts up. It probably won't start up unless you're playing a demanding 3D game or doing something else that taxes both your GPU and CPU.

By the way, the fan sucks air in and exhausts out the back of the power supply. It wouldn't bother me to place the power supply in a fan-down arrangement unless it's actually sitting flush with the bottom of the case. As long as there's a gap, it will be able to get enough cooling air when it needs it. Most cases designed for a bottom-mount power supply have a fan cutout at the bottom where the power supply mounts, but it doesn't look like your DF-30 has that. Bad, bad Antec. If you're really worried about it you can always mount the power supply fan-side up. It's up to you.
