I need to build another computer, one that is VERY stable, very fast, excellent graphics, for a number of computer simulations and some AI research. No gaming. I am tending towards quad core and 8+BG of RAM, Win 7, and no less than four monitors. Can you give me some guidance?

For rock solid stability the Intel® boards are maybe your best answer. Based on what you are going to be doing with the system may change which boards will fit your needs the best but the new Intel® Desktop DZ68BC enthusiast board. You most likely are going to have to run 2 video cards off from the boards 2 16x video slots to give yourself the 4 monitors. With a single dedicated video card with 2 ports on it you can run it at least 3 monitors by using the IGP (Intergraded Graphics on Processor) to power 1 of the monitors and the dedicated video doing the other 2.

Thanks for the advice. I shall investigate it thoroughly. I had been looking at ASUS boards but will shift to Intel.
