So I have the i5 2500k sandy bridge on the way. I haven't purchased it yet, but I plan on getting the 460GTX. I don't plan on running SLI with this build. I also have 8GB (2x 4GB) of DD3 1600 on the way as well.

I also don't know anything about overclocking so I have no reason to do so. I know i'll be more than happy with default settings. that said, I was looking for an affordable mobo that will do the job (again, dont need SLI support and dont plan on OCing).

I narrowed it down to these 2 that are both ~120 USD

MSI P67A-G43 (B3) P67 ATX LGA1155 DDR3 2PCI-E16 3PCI-E 2PCI CrossFireX SATA3 USB3 Motherboard
ASUS P8Z68-V LX Z68 LGA1155 ATX 2PCI-E16 2PCI-E1 DDR3 SATA3 USB3.0 Audio Video CrossFire Motherboard

I don't know jack about hardware so if there is a better option available without the added features, please let me know! Thanks :D

The ASUS P8Z68-V LX is good. You can also get this BIOSTAR TZ68A+ LGA 1155 Intel Z68 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard @ $110.
