Great, this build is coming in around $680 before Shipping/Taxes and I wouldn't be opposed to stretching it to $750 if there was good reason to. Any other recommendation on the GPU that would enhance longevity or should I stow the extra cash for an extra GPU to go crossfire eventually?

You could put that last $70 towards getting a 6950, but honestly I don't think it's worth it. Unless you really need that little bit of extra power right now, I would just stick with the 6870 you have already picked out. If and when you need more power, buy another one and crossfire them. I think that's a much better decision than getting the 6950 now.
 
another option for that extra $70 is to jump to the X6 1075t. Its 3.0GHz/3.5GHZ Turbo, its $199.

Some games are showing the thuban as better than the deneb core: Metro 2033, WOW Cataclysm both use all 6 cores/ Anything actually using 4 cores the extra 2 cores can be used to run background processes
