Is the extra €300 worth it? Am I going to notice a considerable difference?

Neither build is very good. You want a hyperthreaded CPU if you go intel, or an x6 if you go AMD.

Also, for workstation tasks, the GPU's listed are pretty useless. If your software is CUDA accelerated grab an Nvidia GPU for CUDA. If it's open GL then decide GPU based on what version you need.

Also OCZ RAM has been very poor lately.
