YOu don't want 3 mem sticks, the 1156 mbs are dual channel access, get a pair of 2 or 4 gb modules....

FYI, Newegg has 5870 gpus for 239 after rebate....a very solid jump over a single GTX460 (THe 5870 is just short of the GTX570 in gaming benchmarks, but , $120 or 30% less...)

you need either an amd 5xxx or 6xxx card or two nvidia cards to run 3 monitors

I'd get a single card, but you also need an active displayport to dvi adapter unless one of your monitors has displayport. Newegg has the adapters for about $27 http://www.newegg.com/Product/Product.aspx?Item=N82E16814999030&cm_re=displayport_to_dvi_active-_-14-999-030-_-Product

Also, Sandy bridge comes out on the 9th and will be similar pricing to 1156 mobo's/cpu's but will perform better.
