Hello, I'm trying to replace plug on my speaker wires. There are three wires on speaker, one copper, one red and whitel. Only red and white on replacement plug it possible to connect all or do I need a new replacement cord?

You will need to replace the cord in order to get the full effect of having multiple channels. My guess would be you have a left, right and sub-woofer or center speaker wire there, though I am not sure. If you connect them all together in a plug the plug will not be able to differentiate where the signal is supposed to go and you will have one channel sending input to two devices, one of which is not intended to be getting the signal from the wires source.
