Unless you are running an SLI setup with a high resolution, the 768 version may be enough. It's not until you get to the 1920x1200 resolution with AA on that you occationally need the 1GB version, and a single card is not powerful enough to run those settings in most those cases.
The 1GB version is also faster in general. I am not sure why.
